Does it exist any documentation of the internal format JavaFibs uses to store games?

Yep, it's fully documented in the manual that comes with the JavaFIBS2001 archive.

Ah found it :) But is it possible to retrieve some kind of timestamp when the game was played?

Not from the data saved IN the files, but the files themselves contain the time when they were created, which is when the match was played.
